Thai noodles


dressing:
2 T rice vinegar
1/4 cup low sodium soy sauce
1/4 cup peanut butter(preferably natural)
2 T grated ginger
1 T dark sesame oil
1 tsp brown sugar( I use agave nectar)
1 lime
1/2 cup hot water


everything else:
8 oz whole wheat thin spaghetti
1/2 bag coleslaw mix
1/2 cup red pepper( thin strips)
1/2 cup chopped cilantro
1/2 lime
1/4 cup green onions chopped
1 or 2 zucchinis julienned
1 poached chicken breast chopped


Combine all ingredients for dressing and whisk together. Set aside. Cook noodles according to package. Put in fridge to cool. While your pasta is cooking chop and prepare all other ingredients. combine dressing, noodles and all other ingredients together and mix. This can be eaten hot or cold. Either way it is a wonderful explosion of tastes. Enjoy!
